3 Delicious Recipes for Blackberries

I love eating blackberries, we used to pick them when we were kids

I was super excited to find them when we went camping on the Mogollon Rim, and we picked plenty so that we could use them when we got home. I probably picked quite a bit more than what I brought home but they were so yummy. Plus, the kids loved them too!

Ben’s Berry Banana Shake

Ingredients:
1 Cup Vanilla Ice Cream (Froyo would be an excellent alternative)
1/2 Banana
1/2 Cup Strawberries
1/3 Cup Blackberries
1/2 Cup Milk
1/2 Cup Ice (No ice needed if berries are frozen)

If using a Blendtec Blender (See Also: Why I Love My Blender) use the Milkshake button. For all other blenders just blend as directed or until it becomes a Milkshake consistency. This makes one serving if you’re my husband, two if you are me!

Wild Berry Breakfast Rolls

Ingredients:
Store Bought or Homemade Crescent Roll Dough (See Also: My Favorite Roll Recipe)
Fresh Blackberries or Other Berries
Sugar

Directions:
Mix berries and sugar (about 1/4 Cup of Sugar to 2 Cups of Blackberries)

Roll the crescent dough so that it is thin. Spread some berries in the center of the crescent roll, and lay another crescent roll on top of it. Pinch the edges together and fold them over to seal it.

Bake the berry turnovers at 350 degrees for about 15 minutes or until golden brown. The berry juices may leak out but they are still delicious! I like to top mine with butter or nutella, just like these strawberry ones.

Wild Berry Jam

Adapted From Blendtec’s Strawberry Jam
Ingredients:
3 Cups Fresh Blackberries
2 Cups Sugar
2 Tablespoons Grated Lemon Rind
1/2 Cup Light Corn Syrup

Directions:
With the BlendTec, pulse the berries, sugar and lemon together to mix it up, then blend the corn syrup in with them, on the sauces mode, until everything looks blended well.

This a perfect amount for fresh jam in the fridge, but more could be canned or frozen as well!
