FRESH TOMATO & MOZZARELLA SALAD {WHAT I EAT ALL SUMMER}

I don’t cook very well, but I love eating well.

That is one of the reasons I am a bit obsessed with finding the EASIEST way to make yummy foods.

So easy that it is almost embarrassing to call it a recipe.

This is one of those things. I eat it almost daily all summer and it literally takes 3 minutes to pull a serving {or family salad} together.

FRESH TOMATO AND MOZZARELLA SALAD RECIPE

There are just 4 ingredients:

  • Cherry tomatoes {or whatever fresh tomatoes are available}
  • Fresh Mozzarella cheese balls packaged in water
  • Fresh Basil
  • Balsamic Glaze

The key to this recipe is the Balsamic Glaze. In the last few years it has become available at the grocery story made by several major manufacturers. In the past, it was something you had to reduce yourself which is a bit out of my skill set.

What I do is cut the cherry tomatoes in half into my bowl. I also cut the Mozzarella balls in 1/2 adding them to the tomatoes in a 2 tomato to 1 cheese ratio. I cut the fresh basil into strips and add 1 large leaf per serving. Drizzle with a liberal amount of balsamic glaze.

Yep, that is it.

It is one of those things that I can eat almost anytime. It is a cool summer lunch or a nice side dish for dinner. Even my oldest son has started eating it regularly. I like that I can make just one serving or a large amount {which keeps in the fridge fine overnight} for the family.
