Recipe Of The Week – Summer Salad


This summer salad is a favorite in our household. We all know that one of the hardest things to do when you have a blended family is to making dishes that everyone likes. It is a constant battle, specially if you have a picky in the family as we have.
This salad is one of those recipes that everyone likes as it has such a mix of tropical flavors and it is super healthy. The best part is that it literally takes 10 minutes to prepare. You can pair it with any type of grilled meat or fish or just eat it by itself as a side dish or appetizer. It truly is delicious!. Here you go:
1 can of 15.8 oz black beans. I use Bush’s beans but you can use whatever brand you like
1 can of 15.25 oz Whole Kernel Corn
1 can of 15.5 oz Garbanzo beans
1 Red Pepper chopped or diced
1/2 Cup of Cilantro Leaves
2 Cups Chopped Mango
3 Tablespoons Olive Oil
2 Tablespoons Balsamic Vinegar
1 Tablespoon Ground Cumin
Salt to taste
In a large bowl mix all the ingredients.
